Flatbread Company Bedford

I went to Flatbread Company in Bedford (the URL actually says Burlington) shortly after they opened and wasn't impressed by anything, so it was time for another visit.

The sign out front was a bit boring but look how nice the actual entrance is! Parking can be tricky since they share the lot with a Chinese place that's very busy at lunchtime.

Looks like I remember it and the tables are spaced far apart and this time I got a nice window booth. The view wasn't too exciting since it was pouring outside. Not too busy and it looked to be a fair amount of company lunches.

My pizza (sorry, my flatbread) is being made next to the wood fired oven.

I thought the Mopsy’s Kalua Pork Pie ($13.25 small) looked good. "Your choice - smoked free-range pork shoulder or oven-roasted free range chicken , homemade organic chipotle BBQ sauce, organic red onions, fresh pineapple, Vermont Butter Goat cheese, premium whole milk mozzarella, Imported Parmesan cheese and our organic herb mix." Hold the pineapple. It looked good but there wasn't an abundance of pork and the goat cheese was so mild it didn't add any flavor at all. The BBQ sauce tasted just very faintly of chipotle and was very sweet. The herb mix was mostly in the center of the flatbread. The crust itself was very very good, super thin and still crisp and tender. For that price, I expected more pork.
